Iron Skillet Gnocchi with Savoury Turkey Sausage

Preparing meals mid-week can be a struggle. Believe me; I have been known to whip up an uninspiring dinner of grilled cheese and whatever left-over veg I have in the fridge. But, you can cook a complete meal that is both tasty and quick. One of my faves is this iron skillet gnocchi recipe. It is so easy, and so delicious. Full credit to Kwan Yu Li, one of my dietitian friends, for the inspiration!

An added bonus? For those who struggle with keeping their iron levels up, cooking in an iron skillet helps to fortify your cooking ingredients with iron.  Just check with your doctor to make sure you aren’t one of those unlucky people who suffer from iron overload (also known as hemochromatosis). Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Makes: 6 servings

INGREDIENTS

3 garlic cloves, chopped

3 tablespoons olive oil

3 turkey sausages, sliced to about 1-inch thickness.

1-quart cherry tomatoes washed and halved

Salt and pepper to taste

¼ cup basil, chopped (for garnish)

 

INSTRUCTIONS

  1. Heat oil in an iron skillet, sauté garlic for 2-3 minutes on medium heat, being careful not to brown it.

  2. Meanwhile, boil water in a large pot, adding gnocchi once boiled. Cook gnocchi to package instructions.

  3. Once garlic is sautéed, add the turkey sausages, cook for about 2-3 minutes a side until cooked.

  4. Add the cherry tomatoes, cut side down, and warm for 2 minutes.

  5. Add the cooked gnocchi to the skillet. Stir to combine and remove from heat.

  6. Serve immediately topped with fresh basil, cracked black or red pepper and parmesan.
