Beet You To It Smoothie

Try this tasty beet smoothie recipe as an energy booster before practice, to replenish after a workout, or as a mid-afternoon pick me up. The vanilla yogurt adds a touch of sweetness but if you would rather forgo the added sugar altogether change it up for low-fat plain yogurt. And if you’re vegan switch the yogurt out for soy yogurt and you’re good to go. But my favourite trick is to add a sprig of mint which tempers the beets and makes this a nice refreshing treat.

Ingredients

Makes 2 cups

1 sprig Fresh Mint

½ cup Frozen Beetroot

1 medium Banana

½ cup Vanilla Yogurt

½ cup Frozen Strawberries

½ cup Water

1 tsp. Vanilla Extract

 

Directions

Place the beetroot, banana, strawberries, and mint in a blender. Pour the yogurt, water and vanilla extract on top. Blend gently until mixed and then on high speed until well blended. Serve immediately.
