Peanut Butter Chocolate Energy Balls
For those lucky souls who have no nut allergies in their household peanut butter and chocolate is a perfect combination of delicious, decadent and protein packed. I love a good chocolate recipe, and this one doesn’t disappoint. These are great at room temperature or chilled in the fridge. I actually like them right out of the freezer. Eat Peanut Butter Chocolate Energy Balls after a workout or take them along to fuel your session. Due to the nut butter, they are a source of fat which may not be well tolerated by some during a workout. Test your tolerance beforehand or keep them for after exercise.

Makes: 1 dozen balls
INGREDIENTS
2/3 cup Oats
¼ cup Nut Butter, I like peanut but choose your favourite!
1 Tablespoon Chia Seeds
¼ cup Dark Chocolate Chunks
¾ cup Pitted Dates
¼ cup Dried Cherries
½ teaspoon Vanilla Extract
1 teaspoon Maple Syrup
INSTRUCTIONS
- Soften dates in warm water for 10 minutes.
- Combine dates, dried cherries, dark chocolate and chia seeds in a food processor.
- Pulse until fully mixed and dates are fully chopped.
- Add oats and nut butter. Pulse together stopping intermittently to push the batter down the sides of food processor with a spatula. Mix until just combined.
- Roll batter into 1” balls with your hands.
- Store balls in an airtight container in the fridge or freezer. Happy snacking!
