Lemony Coconut Energy Balls

INGREDIENTS
1 cup Oats
¾ cup Dried Apricots
¼ cup Cashews
3 tablespoons Shredded Coconut
2 tablespoons Coconut Flour
2 tablespoons Honey
1 tablespoon Coconut Oil
3 tablespoons Lemon Juice
1 teaspoon Lemon Zest (choose organic lemons for zesting as you are using the peel)
INSTRUCTIONS
- Combine all the ingredients in a food processor.
- Mix on low speed until all ingredients are fully mixed, then mix on medium speed until ingredients smoothly combined.
- Roll batter into 1” balls with your hands.
- Place balls in fridge or freezer to set for 15 to 30 minutes. Enjoy!
- Store balls in an airtight container in the fridge or freezer for up to a week.
